Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment.

  2. Mash the bananas in a bowl until mostly smooth.

  3. Mix in the shredded coconut until a sticky dough forms. Add 1–2 tbsp extra coconut if it’s too wet.

  4. Scoop about 2 tbsp of dough, roll gently, flatten, and press a small dent into the center of each cookie.

  5. Bake 13–16 minutes, until the edges are lightly golden.

  6. Cool completely so the cookies firm up.

  7. Spoon melted chocolate into each center and let it set.
