  • 2 tbsp unflavored gelatin (about 2 packets)

  • 1–2 tbsp pure maple syrup (to taste)

Instructions:

  1. Blend the fruit: Puree the strawberries until smooth. For a smoother texture, strain to remove seeds.

  2. Bloom the gelatin: In a small bowl, sprinkle the gelatin over the cold water. Let it sit for 5 minutes to bloom.

  3. Gently heat the puree: Warm the strawberry puree in a small saucepan over medium heat. Stir in maple syrup. Do not boil—just heat until warm and steamy.

  4. Dissolve the gelatin: Stir the bloomed gelatin into the warm puree until fully dissolved and the mixture is smooth.
