What an effortless weekend breakfast for all my kiddos! These pancakes were a breeze to whip up, and everyone absolutely loved them!


I had one of those "this banana is way too ripe for anything but banana bread" moments and a surplus of baby yogurt. So, I turned to ChatGPT for a baby-friendly pancake idea:

I have 1 very ripe banana, 4 oz lightly sweetened whole milk strawberry baby yogurt. Help me come up with a recipe to make baby friendly pancakes. It can be sweet. Going to make for breakfast for my kids. I have older kids too so need to be sweet enough but not too much

And here it is:

Ingredients

  • 1 very ripe banana, mashed

  • 4 oz lightly sweetened whole milk baby yogurt (any flavor)

  • 1 large egg

  • 1/2 teaspoon vanilla extract (optional)

  • 1/2 cup all-purpose flour

  • 1/4 teaspoon baking powder

  • Butter or oil for cooking


Instructions

  1. In a bowl, mash the banana until smooth.

  2. Add the yogurt and egg, whisking until well combined. Stir in vanilla if using.

  3. In a separate bowl, mix the flour and baking powder. Gradually fold the dry ingredients into the wet mixture until the batter is smooth.

  4. Heat a non-stick pan over medium-low heat and lightly grease with butter or oil.

  5. Drop spoonfuls of batter (about 1 tablespoon each) to form small pancakes. Cook for 2–3 minutes, until bubbles form on the surface, then flip and cook for 1–2 minutes until golden.

  6. Serve plain for babies or with a drizzle of maple syrup for older kids.
